Bacon Stuffed Cherry Tomato Mouth
Makes 30 servings
Prep Time: 10 min.
Cooking Time: 7 min.
Chilling Time: 2 hrs.
Cook bacon in large skillet
until browned, for 5-7 minutes. Drain and finely chop.
Remove stem from cherry tomatoes
and cut a thin slice from the bottom of each tomato (the
tomatoes will stand upright on stem end).
Scoop out tomato seeds and pulp.
Lightly salt tomato cavities and
drain upside down on paper towels for 20 minutes or as long as
overnight, tightly covered in the refrigerator.
Combine bacon, course ground
pepper, basil, scallions, mayonnaise and feta cheese in a small

cavities, mounding slightly.
Refrigerate up to two hours
