Bacon Stuffed Cherry Tomato Mouth Poppers

Ingredients

  • 1/2 - pound Premium Regular Smoked Bacon (about 8 slices)
  • 1 - pound Cherry Tomato
  • 1/2 - teaspoon Salt
  • 1/2 - teaspoon course, Ground Pepper
  • 1/2 - teaspoon finely chopped Basil (dried also works fine)
  • 4 - Scallions finely chopped
  • 1/2 - cup Mayonnaise
  • 1/4 - cup Feta Cheese finely crumbled

Directions

  1. Cook bacon in large skillet until browned, 5-7 minutes. Drain and finely chop.
  2. Remove stem from cherry tomatoes and cut a thin slice from the bottom of each tomato (the tomatoes will stand upright on stem end).
  3. Scoop out tomato seeds and pulp.
  4. Lightly salt tomato cavities and drain upside down on paper towels for 20 minutes or as long as overnight, tightly covered in the refrigerator.
  5. Combine bacon, course ground pepper, basil, scallions, mayonnaise and feta cheese in a small bowl.
  6. Spoon filling into tomato cavities, mounding slightly.
  7. Refrigerate up to two hours before serving.
