Bacon Stuffed Cherry Tomato Mouth

Makes 30 servings
Prep Time: 10 min.
Cooking Time: 7 min.
Chilling Time: 2 hrs.
Ingredients:
- 1/2 - pound Premium Regular
Smoked Bacon (about 8 slices)
- 1 - pound Cherry Tomato
- 1/2 - teaspoon Salt
- 1/2 - teaspoon course, Ground
Pepper
- 1/2 - teaspoon finely chopped
Basil (dried also works fine)
- 4 - Scallions finely chopped
- 1/2 - cup Mayonnaise
- 1/4 - cup Feta Cheese finely
crumbled
Directions:
- Cook bacon in large skillet
until browned, 5-7 minutes. Drain and finely chop.
- Remove stem from cherry tomatoes
and cut a thin slice from the bottom of each tomato (the
tomatoes will stand upright on stem end).
- Scoop out tomato seeds and pulp.
- Lightly salt tomato cavities and
drain upside down on paper towels for 20 minutes or as long as
overnight, tightly covered in the refrigerator.
- Combine bacon, course ground
pepper, basil, scallions, mayonnaise and feta cheese in a small
bowl.
- Spoon filling into tomato
cavities, mounding slightly.
- Refrigerate up to two hours
before serving.
