Ribbon Sandwiches

Ingredients:

  • Ham Filling Ingredients:
    • 1/2 - cup finely chopped cooked ham
    • 2 - Tablespoons mayonnaise
    • 2 - Tablespoons sweet pickle relish
    • 1/2 - teaspoon prepared mustard
  • Egg Filling Ingredients:
    • 2 - hard-cooked eggs, chopped
    • 2 - Tablespoons mayonnaise
    • 2 - Tablespoons finely chopped celery
    • 1/4 - teaspoon salt
  • Cream Cheese Spread Ingredients:
    • 1 - package (3-ounce) cream cheese, softened
    • 1 - teaspoon chopped fresh parsley, if desired*
    • 1 - teaspoon chopped fresh chives, if desired**
  • Sandwiches Ingredients:
    • 8 - slices whole wheat bread
    • 8 - slices white bread
    • 3 - Tablespoons butter , softened
    • Thinly sliced cucumber
    • Parsley sprigs
    • Chives
    • Celery leaves

Directions:

  1. Ham Filling Ingredients: in a small bowl, combine finely chopped cooked ham, mayonnaise, sweet pickle relish, and prepared mustard.
  2. Egg Filling Ingredients: in a small bowl, combine hard-cooked eggs, mayonnaise, finely chopped celery, and salt.
  3. Cream Cheese Spread Ingredients: in a small bowl, combine cream cheese, chopped fresh parsley, and chopped fresh chives.  Set aside.
  4. Stack whole wheat bread slices together; trim crusts from bread creating equal-sized slices.
  5. Repeat with white bread slices, trimming to same size as whole wheat slices.
  6. Butter 1 side of each trimmed bread slice.
  7. Place 4 whole wheat bread slices, buttered-side up onto serving tray.
  8. Spread each with about 2 Tablespoons ham filling.
  9. Top each with 1 slice white bread, buttered-side down.
  10. Place remaining 4 whole wheat bread slices, buttered-side up onto serving tray.
  11. Spread each with about 2 tablespoons egg filling.
  12. Top each with 1 slice white bread, buttered-side down.
  13. Spread top of each sandwich with about 1 1/2 teaspoons cream cheese spread.
  14. Wrap each sandwich with plastic food wrap; refrigerate at least 1 hour.
  15. Slice each sandwich into thirds.
  16. Garnish each slice with cucumber slices, parsley sprigs, chives or celery leaves.
  • *Substitute 1/4 teaspoon dried parsley leaves.
  • **Substitute 1/4 teaspoon dried chives.
