Texas Bean Dip
Appetizer & Snack Recipes from AlansKitchen.com Makes 12 to 24 servings

Ingredients

  • 1 - cup onion, minced
  • 1 - teaspoon garlic, minced
  • 2 - teaspoon vegetable oil
  • 1 - can (15 ounces) black beans
  • 1 - can (15 ounces) pinto beans
  • 1 - can (15 ounces) black-eye peas
  • 1 - can (15 ounces) whole kernel corn
  • 1 - pound ground beef, cooked and drained or 12 ounces fully cooked ground beef
  • 1 - jar (16 ounces) salsa with cilantro
  • 1 - jar (16 ounces) salsa with Chipotle
  • 2 - Tablespoon fresh cilantro, minced

Directions

  1. In a large saucepan, you want to sauté onion and garlic in 2 teaspoon vegetable oil.
  2. Drain and rinse beans, black-eye peas and corn.
  3. Add to onion and garlic.
  4. Stir in the ground beef and salsas and heat through.
  5. Sprinkle with fresh cilantro and serve in a western ceramic pot with tortilla chips.
