Texas Bean Dip
Makes 12 to 24 servings

Ingredients
- 1 - cup onion, minced
- 1 - teaspoon garlic, minced
- 2 - teaspoon vegetable oil
- 1 - can (15 ounces) black beans
- 1 - can (15 ounces) pinto beans
- 1 - can (15 ounces) black-eye peas
- 1 - can (15 ounces) whole kernel corn
- 1 - pound ground beef, cooked and
drained or 12 ounces fully cooked ground beef
- 1 - jar (16 ounces) salsa with cilantro
- 1 - jar (16 ounces) salsa with Chipotle
- 2 - Tablespoon fresh cilantro, minced
Directions
- In a large saucepan, you want to sauté
onion and garlic in 2 teaspoon vegetable oil.
- Drain and rinse beans, black-eye peas
and corn.
- Add to onion and garlic.
- Stir in the ground beef and salsas and
heat through.
- Sprinkle with fresh cilantro and serve
in a western ceramic pot with tortilla chips.
