Tomato Parmesan Bruschetta

Makes 18 servings, 1 appetizer eachAppetizer & Snack Recipes from AlansKitchen.com

Prep Time: 15 min.
Broiler Time: 4 min.

Ingredients:

  • 1 - large tomato, chopped (about 1-1/2 cups)

  • 1/2 - cup Grated Parmesan Cheese

  • 2 - cloves garlic, minced

  • 1/3 - cup olive oil, divided

  • 1/4 - cup sliced fresh basil leaves or 1 tsp. dried basil leaves

  • 1 - loaf (1 pound) French bread, cut into 1/2-inch slices

Directions:

Preheat broiler.

  1. In a medium bowl, you want to mix tomato, cheese, garlic, 2 Tablespoon of the oil and the basil. Set aside.  Brush remaining 1 Tablespoon oil evenly onto both sides of bread slices.

  2. Place in single layer on baking sheet.  Broil, 6 inches from heat, for 2 min. on each side or until edges are golden brown.

  3. You want to top each toast slice with about 1 Tablespoon of the tomato mixture.
