Beef Steaks with Grilled Parmesan Vegetables
Makes 4 servings.

Seasoning
1 -Tablespoon minced garlic
2 - teaspoon dried basil
1 - teaspoon pepper

2 - beef T-bone or Porterhouse steaks, cut 1 inch thick (about 2-pounds)
1/4 - cup Parmesan cheese, grated
2 - Tablespoons olive oil
2 - Tablespoons red wine vinegar
2 - medium red or yellow bell peppers, quartered
1 - large red onion, sliced (1/2-inch)

Prepare a medium fire in your grill.

  • In a small mixing bowl, add garlic, basil and pepper. 
  • Mix and reserve 4 teaspoons. 
  • With remaining seasoning, press onto beef steaks. 
  • To the reserved seasoning, add cheese, oil and vinegar to remaining seasoning. 
  • Mix well.
  • Place steaks in center of grid over ash-covered coals. 
  • Place vegetables around steaks. 
  • Grill steaks, uncovered, for 14 to 16 minutes for medium rare to medium doneness, turning occasionally. 
  • Grill bell peppers for 12 to 15 minutes and onion for 15 to 20 minutes or until tender, turning once. 
  • Brush vegetables with cheese mixture during the last 10 minutes.

Picnicking & Tailgating

Mix the ingredients at home and wrap in plastic wrap.  Then place in plastic container and cover.  Put container in ice chest to keep cool.  Cook on the grill just as you would do at home.
