Barbecue & Grilling Recipes from AlansKitchen.comIngredients

  • 3/4 cup Italian dressing
  • 3/4 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 4 boneless, skinless chicken breasts
  • 2 medium yellow squash, halved lengthwise

Directions

  1. In a small bowl, add Italian dressing, cumin and cayenne pepper. Mix. 
  2. Put 1/2 cup of marinade with chicken and squash in a resealable plastic bag. 
  3. Place in refrigerator 30 minutes to 3 hours. 
  4. Refrigerate remaining marinade.

Preheat grill to medium according to manufacturer’s directions.

  1. Drain chicken and squash and throw away marinade. 
  2. Grill chicken and squash, brushing frequently with reserved 1/4-cup marinade, 4 to 6 minutes per side or until squash is tender and chicken is done (internal temp 170°F).

Picnicking & Tailgating

Place in ice chest.  When the grill is ready, just take them out of the ice chest and grill.
