Serrano Pepper Grilled Chicken

Makes 6 servings Barbecue & Grilling Recipes from AlansKitchen.com

Prep Time: 15 min.
Grilling Time: 60 min.

Ingredients:

  • Sauce Ingredients:
    • 1/4  cup butter, melted
    •    4  Serrano Peppers, seeded, chopped
    •    2  teaspoons finely chopped fresh garlic
    • 1/4  teaspoon salt
    • 1/4  teaspoon coarse ground pepper
    • 1/8 to 1/4  teaspoon ground red pepper
  • Chicken Ingredients:
    • 1  (3 to 4-pound) frying chicken, cut into 8 pieces
  • Garnish Ingredients:
    •     Green chile salsa or green chile taco sauce, if desired

Cooking Directions:

Heat 1 side of gas grill on medium or charcoal grill until coals are ash white.  Place coals to 1 side in charcoal grill.  Make aluminum foil drip pan and place opposite coals.

  1. To make the sauce, in a small bowl, stir together butter, Serrano Peppers, chopped fresh garlic, salt, ground pepper, and ground red pepper.

  2. Place chicken pieces on grill over drip pan; brush with sauce.

  3. Cover and grill for 50 to 60 minutes, turning and basting occasionally with sauce, until internal temperature reaches at least 165F. and juices run clear when pierced with a fork. Serve with salsa, if desired.
