Grilled Chicken Breasts with Wine Sauce

Cooking Time: 7 min.
Grilling time: 35 min.

Ingredients:

  • Chicken Ingredients:
    •    6  (4 ounces each) boneless, skinless chicken breasts
    •    2  Tablespoons vegetable oil
  • Wine Sauce Ingredients:
    •    3 Tablespoons butter
    •    1 Tablespoon finely chopped fresh garlic
    •    2 Tablespoons all-purpose flour
    • 1/2 cup chicken broth
    • 1/4 cup chopped fresh parsley
    • 1/4 cup white wine or chicken broth
    • 1/4 teaspoon salt
    • 1/8 teaspoon pepper
    •    1 cup Light or No-Fat Sour Cream

Cooking Directions:

Prepare grill, placing coals to one side. Heat until coals are ash white. Make aluminum foil drip pan and place opposite coals.

  1. Brush chicken breasts with oil and place on grill over drip pan.

  2. Grill for 25 to 35 minutes, turning occasionally, until no longer pink.

  3. Meanwhile, in 2-quart saucepan, melt butter until sizzling and stir in garlic.

  4. Cook over medium-high heat 1 minute.

  5. Stir in flour and continue cooking for 1 minute until bubbly. Reduce heat to medium.

  6. Stir in chicken broth, parsley, white wine (or chicken broth), salt, and pepper.

  7. Cook for 1 to 2 minutes, stirring occasionally, until sauce thickens.

  8. Stir in sour cream.  Continue cooking for 3 to 5 minutes, stirring occasionally, until heated through.

  9. Serve over grilled chicken.

Wine sauce can be served over broiled, baked or poached chicken breasts.
