Pineapple, Sweet Potatoes and Chicken

Prep Time: 15 min.
Grilling Time: 1 hr.

Ingredients:

  • Vegetables Ingredients:
    •    2  small sweet potatoes, peeled, cut up
    •    1  can (20-ounce) pineapple chunks in juice, drained, (reserve juice)
    •    1  medium onion, cut into eighths
  • Butter Sauce Ingredients:
    • 1/4  cup butter, melted
    • 1/3  cup reserved pineapple juice
    •    1  Tablespoon soy sauce
  • Chicken Ingredients:
    •    1  (3 to 4-pound) frying chicken, skinned, cut up

Cooking Directions:

Heat one side of gas grill on medium or charcoal grill until coals are ash white. Place coals to one side in charcoal grill. Make aluminum foil drip pan; place opposite coals.

  1. Meanwhile, place sweet potatoes, pineapple and onion in center of 18-inch square heavy-duty aluminum foil.

  2. In a small bowl, combine butter, reserved pineapple juice, and soy sauce.

  3. Drizzle half of sauce over sweet potato mixture.

  4. Bring edges of aluminum foil up to center and tightly seal top and sides.

  5. Place chicken on grill over drip pan; brush with remaining butter sauce.

  6. Cover and grill for 50 to 60 minutes, turning occasionally, until fork tender.

  7. Place sweet potato bundle on grill over direct heat during last 30 minutes of chicken grilling time.

  8. Grill for 25 to 30 minutes, turning once, until potatoes are tender.

  9. Sprinkle with chopped fresh parsley, if desired.

  10. Salt and pepper to taste.
