Ingredients
- 1 - Tablespoon paprika
- 1 - teaspoon garlic powder
- 1 - tsp. cayenne pepper
- 1/2 - teaspoon onion
powder
- 1/2 - teaspoon freshly
ground peppercorns (combine Tellicherry black, Muntok
white, Green and Pink peppercorns)
- 1/2 - teaspoon dried thyme
- 1/2 - teaspoon dried
oregano
- 1/2 - teaspoon salt
- 2 - teaspoon grated lemon
zest.
- 6 - Tablespoons vegetable
or olive oil
Directions
- In a small cup, combine
paprika, garlic powder, cayenne pepper, onion powder,
ground peppercorns, thyme, oregano, and salt.
- Just before rubbing on
meats, add the lemon zest.
- Brush both sides of food
with vegetable or olive oil. Rub in Peppercorn and Herb
Rub.
- Wrap in plastic wrap and
put in refrigerator for 30 minutes to 2 hours before
grilling.
