Peppercorn & Herb Rub
Makes enough rub for 2 to 2-1/2 pounds of meat.

Ingredients
  • 1 - Tablespoon paprika
  • 1 - teaspoon garlic powder
  • 1 - tsp. cayenne pepper
  • 1/2 - teaspoon onion powder
  • 1/2 - teaspoon freshly ground peppercorns (combine Tellicherry black, Muntok white, Green and Pink peppercorns)
  • 1/2 - teaspoon dried thyme
  • 1/2 - teaspoon dried oregano
  • 1/2 - teaspoon salt
  • 2 - teaspoon grated lemon zest.
  • 6 - Tablespoons vegetable or olive oil

Directions

  1. In a small cup, combine paprika, garlic powder, cayenne pepper, onion powder, ground peppercorns, thyme, oregano, and salt. 
  2. Just before rubbing on meats, add the lemon zest.
  3. Brush both sides of food with vegetable or olive oil. Rub in Peppercorn and Herb Rub. 
  4. Wrap in plastic wrap and put in refrigerator for 30 minutes to 2 hours before grilling.
