Mid-Western Barbecue Sauce
Makes about 2 cups.
1/4 - cup extra-virgin
olive oil
1/2 - cup red onion,
finely chopped
2 - teaspoons garlic,
minced
1 - cup chicken broth
3/4 - cup ketchup
1/2 - cup orange juice concentrate
1/2 - cup steak sauce
2 - Tablespoons Worcestershire sauce
1 - Tablespoon white wine
vinegar
1 - Tablespoon ground
coffee
2 - teaspoons dried chervil
1/2 - teaspoon celery seeds
1/2 - teaspoon freshly ground black
pepper
- In a medium saucepan over medium-high heat, warm the olive
oil.
- Add the onion and garlic and cook for 2 to 3 minutes,
stirring occasionally.
- Add broth, ketchup, orange juice, stead
sauce, Worcestershire sauce, vinegar, coffee, chervil, celery
seeds, and pepper.
- Whisk together.
- Simmer for 30 minutes,
stirring occasionally.
- Pour sauce in to a glass jar, cover
with plastic wrap, and refrigerate until ready to use.
