Peppercorn & Herb Rub
Makes enough rub for 2 to 2-1/2 pounds of meat
- In a small cup, combine paprika, garlic
powder, cayenne pepper, onion powder, ground peppercorns, thyme,
oregano, and salt.
- Just before rubbing on meats, add the
lemon zest. Brush both sides of food with vegetable
or olive oil.
- Rub in Peppercorn and Herb Rub.
in plastic wrap and put in refrigerator for 30 minutes to 2 hours before
I would put the rub on the meat before
taking to the picnic or tailgate location.
