Peppercorn & Herb Rub
Makes enough rub for 2 to 2-1/2 pounds of meat

Ingredients

1 – tablespoon paprika

1 – teaspoon garlic powder

1 – teaspoon cayenne pepper

1/2 - teaspoon onion powder

1/2 - teaspoon freshly ground peppercorns (combine Tellicherry black, Muntok white, Green and Pink peppercorns)

1/2 - teaspoon dried thyme

1/2 - teaspoon dried oregano

1/2 - teaspoon salt

2 – teaspoons grated lemon zest.

6 – tablespoons vegetable oil or olive oil

Directions
  • In a small cup, combine paprika, garlic powder, cayenne pepper, onion powder, ground peppercorns, thyme, oregano, and salt.  
  • Just before rubbing on meats, add the lemon zest.
  • Brush both sides of food with vegetable or olive oil.  
  • Rub in Peppercorn and Herb Rub.  Wrap in plastic wrap and put in refrigerator for 30 minutes to 2 hours before grilling.

Picnicking & Tailgating

I would put the rub on the meat before taking to the picnic or tailgate location.
