Peppery Soy & Cilantro Marinade
Makes 1-1/2 cups.
Ingredients
1/2
- cup light soy
sauce
1/2
- cup oyster
sauce
1/4
- cup rice vinegar
1/4
- cup peanut
oil
1/4
- cup cilantro,
chopped
4
– cloves garlic,
peeled and chopped
3
– scallions, trimmed
and chopped (include white and
green parts)
1
– tablespoon grated, fresh ginger
2
– teaspoons sugar
1
– Chipotle chile
pepper, seeded and minced
Directions

In a small mixing
bowl, blend all ingredients. Place
meat, chicken, or fish in a glass, ceramic, or plastic container and
pour in marinade.

Allow the chicken or meat
to marinade for at least 6 hours but it is better to let it marinade
overnight.

However, it is best that
you marinade fish for 30 minutes to an hour.
You want to turn every once in a while.

I would put the rub on the
meat before taking to the picnic or tailgate location.
