Peppery Soy & Cilantro Marinade
Makes 1-1/2 cups.

Ingredients

1/2 - cup light soy sauce

1/2 - cup oyster sauce

1/4 - cup rice vinegar

1/4 - cup peanut oil

1/4 - cup cilantro, chopped

4 – cloves garlic, peeled and chopped

3 – scallions, trimmed and chopped (include white and green parts)

1 – tablespoon grated, fresh ginger

2 – teaspoons sugar

1 – Chipotle chile pepper, seeded and minced

Directions
  • In a small mixing bowl, blend all ingredients.  Place meat, chicken, or fish in a glass, ceramic, or plastic container and pour in marinade.

  • Allow the chicken or meat to marinade for at least 6 hours but it is better to let it marinade overnight.  

  • However, it is best that you marinade fish for 30 minutes to an hour.  You want to turn every once in a while.

Picnicking & Tailgating

I would put the rub on the meat before taking to the picnic or tailgate location.
