I define barbecuing as slowly cooking
meat for a long period of time, over low heat and with lots of hot smoke.
It takes tough cuts and cooks it until tender. Truly,
food that melts in your mouth.
Actually, you don't need fancy rubs, basting sauces, and finishing
sauces to have a barbecue. However, most people associate these with barbecuing and
that is how I'll define barbecuing.
