Swedish Coffee Bread

Ingredients

2 – cups milk, scalded

1 – cake yeast, softened in 1/4 cup lukewarm water

2 – tablespoons sugar

6-1/2 - cups all-purpose flour

1/2 - cup shortening

3/4 - cup sugar

15 – cardamom seeds, finely ground

1/2 - teaspoon salt

Directions
  • Beat together milk, yeast, 2 tablespoons sugar and 3 cups flour. 
  • Set aside in a warm place to rise until double in bulk.
  • Cream the shortening and 3/4-cup sugar.  Add the cardamom seeds to the cream mixture.  Then add them to the risen flour ingredients.
  • Now, mix in the remaining flour and salt to the yeast flour mixture.  Knead about 5 minutes into soft dough.  Cover with a cloth and let rise in a warm place until dough doubles in size.

Preheat Oven to 375-degrees F.

  • Shape dough into two loaves, let rise in a warm place until they double in size again.  
  • Bake in a preheated 375-degree oven for 35 minutes or until you can insert a knife into center and it comes out clean.
