Bacon Breakfast
Casserole
Makes 6 servings

Refrigerate Time: 1 hr.
Baking Time: 1 hr.
Ingredients
- 8 - slices white bread, crusts
trimmed, divided
- 8 - slices Bacon, crisply cooked,
crumbled
- 1 - can (4 ounces) sliced mushrooms,
drained
- 2 - green onions, sliced
- 1-1/2 - cups Shredded Mild Cheddar
Cheese
- 4 - eggs
- 2 - cups milk
Directions
Preheat oven to 350°F and grease
8-inch square baking dish.
- Place 4 of the bread slices on
bottom of greased 8-inch square baking dish.
- Top with bacon, mushrooms, onions
and cheese.
- Cover with remaining 4 bread
slices.
- In a medium bowl, add eggs and
milk. Beat with wire whisk until well blended and pour over bread.
Cover.
- Refrigerate at least 1 hour or
overnight.
- Bake, uncovered, for 1 hour or
until center is set and let stand 10 minutes before cutting to
serve.
Alan’s Kitchen Tip:
The best way to test for doneness is to insert a clean meat thermometer into the
center of the casserole. Once the temperature reaches 160° F, your casserole is
done.
