Hearty Breakfast Casserole

Ingredients

  • 1 - bag (28 oz.) frozen O'Brien-style potatoes
  • 1 - Tablespoon vegetable oil
  • 1 1/2 - cups refrigerated egg substitute*
  • 2 - cups shredded fat-free Cheddar cheese
  • 1 - cup fat-free milk
  • 2 - Tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 package Veggie Sausage Links (thawed and chopped)

Directions

Preheat oven to 350 F.  Coat with cooking spray a 13 x 9 x 2-inch baking dish.

  1. In 12-inch nonstick skillet cook potatoes in oil over medium heat about 20 minutes or until golden brown, stirring occasionally. Set aside.

  2. In large bowl combine egg substitute, cheese, milk, flour, salt and pepper. Stir in Veggie Breakfast Sausage Links and cooked potatoes.

  3. Pour mixture into . Bake at for 40 to 45 minutes or until set.

*If desired, substitute 6 beaten eggs for the egg substitute.
