Western Scramble

Ingredients:

  • 8 - eggs
  • 1/4 - cup milk
  • 1 - Tablespoon Sharp Cheddar Seasoning
  • 2 - Tablespoons butter
  • 1/4 - cup finely chopped onion
  • 1/4 - cup finely chopped green bell pepper
  • 1 - cup chopped cooked ham

Directions:

  1. In a medium bowl, combine eggs, milk and seasoning. Beat with wire whisk until well mixed and set aside.
  2. In 12-inch nonstick skillet, melt butter until sizzling. Add onion and green pepper.
  3. Cook over medium-high heat, stirring occasionally, for 2 to 3 minutes or until vegetables are crisply tender.
  4. Add ham and continue cooking 1 minute.
  5. Pour egg mixture over ham mixture. Reduce heat to medium.
  6. Continue cooking, lifting eggs slightly with spatula to allow uncooked portion to flow underneath, for 3 to 4 minutes or until eggs are set.

Alan's Kitchen Tip:

  • Just before serving, season to taste with additional Sharp Cheddar Seasoning, if desired.
