Buckwheat Cakes
Makes 24 cakes
Ingredients:
- 1 - package active dry yeast

2 - cups water, lukewarm

1 - teaspoon sugar

1 - teaspoon salt

2 - Tablespoons molasses

2 - cups buckwheat flour

1 - teaspoon baking soda

1/4 - cup water
Directions:
- In a small bowl, combine the yeast, 1/4-cup water and sugar.

Allow to foam.
- Place yeast mixture in mixing bowl with salt,
molasses, and remaining water.
- Sift in the flour and mix until
batter is thin and smooth.
- Cover with plastic wrap and let rise
overnight.
- In the morning, beat down, dissolve baking soda in water, and mix
into the batter.
- Pour batter on greased hot griddle and cook until
golden brown. Turn once.
