Apple Pancakes

Ingredients
- 2 - cups all-purpose flour
- 1 - teaspoon baking soda
- 1/4 - teaspoon salt
- 1/4 - cup sugar
- 2 - cups buttermilk
- 2 - large eggs
- 2 - Tablespoons butter (melted)
- 1 - large Granny Smith apple
(peeled & chopped)
Directions
- In a large bowl, you want to
combine flour, baking soda, salt, and sugar. You want to
make a well in the middle.
- In a bowl, stir together
buttermilk, eggs, and butter. Add to dry ingredients,
stirring just until moistened.
- Fold in the apple.
- Pour 1/4-cup for each pancake onto
a hot, lightly greased griddle.
- Cook until tops are covered with
bubbles and edges looked cooked. Turn and cook other side.
- Serve.
