Daybreak Burrito

Ingredients

  • 1 - Tablespoon butter
  • 1/4 - cup chopped onion
  • 1/4 - cup chopped green chiles, drained
  • 6 - eggs
  • 2 - Tablespoons water
  • 1/2 - cup hot Italian sausage, cooked, drained
  • 6 - slices (3/4-ounce) slices Deli Jalapenñ Cheese Food, cut in half
  • 6 - flour tortillas (8-inch), warmed
  • 6 - Tablespoons Picante sauce
  • 2 - Tablespoons chopped fresh cilantro leaves

Directions

  1. In a 10-inch nonstick skillet, melt butter until sizzling and add onion.
  2. Cook for 3 to 5 minutes over medium heat until onion is softened and stir in chilies.
  3. Meanwhile, combine eggs and water in medium bowl.
  4. Beat with wire whisk until well mixed.
  5. Pour eggs into skillet; sprinkle with sausage.
  6. Cook for 3 to 5 minutes over medium heat, gently lifting portions with spatula so uncooked portion flows underneath, until eggs are set.
  7. For each serving, place 1/2 slice cheese in center of warm tortilla.
  8. Spoon 1/3 cup eggs over cheese; spread with 1 tablespoon picante sauce.
  9. Sprinkle with 1 teaspoon cilantro and top with 1/2 slice cheese.
  10. Fold edges over filling, overlapping slightly.
  11. Roll up tortilla from bottom to enclose filling.
  12. Repeat with remaining burritos.
