Hearty Breakfast Skillet

Cooking Time: 40 min

Ingredients:

  • 1/2 - pound (8 ounces) pork sausage
  • 2 - cups frozen shredded hash browns potatoes
  • 1 - can (10 ounces) RO*TEL Diced Tomatoes & Green Chilies, drained
  • 1/2 - pound (8 ounces) Pasteurized Prepared Cheese Product, cut up
  • 6 - eggs

Directions:

  1. Brown sausage on medium heat in large oven-proof skillet sprayed with cooking spray and drain.  Add potatoes and tomatoes.  Mix well and cook 5 minutes; stir.  Top with cheese.

  2. Beat eggs and 2 Tablespoons water with wire whisk in medium bowl until well blended.  Pour evenly over ingredients in skillet.

  3. Cover the skillet and continue to cook on stovetop on medium-low heat for 10 to 15 minutes or until egg mixture is set in center and cheese is melted.  Uncover and let stand 5 minutes before cutting to serve as directed.
