Angel Cake with Orange Icing

  • 1 - cup flour
  • 1 - cup sifted sugar
  • 1/4 - teaspoon salt
  • 9 - egg whites
  • 1/2 - teaspoon cream tartar
  • 1 - teaspoon vanilla
  • 2 - teaspoon orange juice
  • Orange Icing (see below)

Directions:

Preheat oven to 325° F.

  1. Sift flour 5 times, sugar 5 times. 
  2. Resift flour with salt and half the sugar. 
  3. Whip egg whites on a platter with wire whisk until foamy. 
  4. Add cream tartar and whip until stiff. 
  5. Whip in balance of sugar, a little at a time. 
  6. Fold in flavoring, then sifted flour and sugar, a little at a time. 
  7. Pour into an ungreased 9-inch tube pan and
  8. Bake for about 60 minutes. 
  9. When cool spread with Orange Icing.

Orange Icing

Ingredients:

  • 1 - egg

  • 1/2 - cup sugar

  • 1 - heaping Tablespoon flour

  • 1 - teaspoon butter

  • 1 - orange, juice and grated rind

  • 1 - teaspoon lemon juice

Directions:

  1. Mix egg, sugar, flour, and butter and simmer over low flame, stirring constantly, until it comes to a boil. 

  2. Place in top of double boiler over boiling water, add orange juice and rind and lemon juice. 

  3. Simmer for 10 minutes. 

  4. Spread on cake.
