Simple Mountain Cornbread

Country Home Cooking RecipesPrep Time: 10 min
Baking Time: 20 min

Ingredients:

  • 2 Tablespoons bacon grease or lard

  • 1-1/2 cups self-rising cornmeal mix

  • 1-1/2 - cups buttermilk

  • 1/2 teaspoon salt

Directions:

Preheat oven to 450 F. and grease 10-inch cast-iron skillet.

  1. Place oven rack on lower third and slide in skillet.
  2. While skillet heats, in a large bowl, add cornmeal and stir in buttermilk and salt.
  3. Pour batter into hot skillet.
  4. Slice skillet back into oven and bake 20 minutes or until brown on the bottom and edges.  (If top is too pale, brown under broiler for 1 minute.
  5. Cut into wedges.
