Mom's Beaten Biscuits

Baking Time: 20 min.

Ingredients:

  • 2 - cups all-purpose flour
  • 1 - teaspoon sugar
  • 1/2 - teaspoon salt
  • 1/4 - teaspoon baking powder
  • 1/8 - teaspoon cream of tartar
  • 1/4 - cup lard (or shortening)
  • 3/4 to 1 - cup ice water
  • Butter

Directions:

Preheat oven to 400° F.

  1. In a mixing bowl, you want to combine flour, sugar, salt, baking powder, and cream of tartar.  
  2. Cut in lard (or shortening) until mixture is like coarse crumbs.
  3. Hollow out center and add 3/4-cup ice water.  Mix well.
  4. (Add additional ice water to make a stiff dough)
  5. Put dough on a lightly floured surface.
  6. Beat vigorously with a wooden mallet for 15 minutes.  Turn, folding dough constantly.
  7. Roll out dough to 1/4-inch thickness.
  8. Cut biscuits out with a floured 2-inch biscuit cutter.
  9. Place on ungreased baking sheet.  Prick tops with a fork.
  10. Bake for 20 minutes or until light brown.  Serve warm with butter.
