Quick and Easy Peanut Butter-Fudge Cake with Fudge Frosting

Prep Time: 20 min.
Baking Time: 25 min.

Ingredients:

  • 2        cups sugar
  • 2        cups all-purpose flour
  • 1        teaspoon baking soda
  • 1/2     teaspoon salt
  • 1-1/2  cups creamy peanut butter
  • 1/2     cup buttermilk
  • 2        large eggs (lightly beaten)
  • 1        cup butter or margarine
  • 1        cup water
  • 1/4     cup cocoa
  • Fudge Frosting (see below)

Directions:

Preheat oven to 325 F.  Grease 10x15-inch jellyroll pan.

  1. In a large bowl, you want to combine sugar, flour, baking soda, and salt.  Stir in peanut butter, buttermilk, and eggs.  In a heavy saucepan over medium heat, melt butter.

  2. Whisk in 1-cup water and cocoa.  Bring to a boil, whisking constantly.  Remove from heat.  Stir cocoa mixture into flour mixture.  Pour into jellyroll pan.

  3. Bake for 20 to 25 minutes or until a wooden pick inserted in center of cake comes out clean.  Spread frosting over warm cake.

Fudge Frosting

Makes 3 cups

Prep Time: 20 min

Ingredients:

  • 1/2 - cup butter or margarine

  • 1/3 - cup milk

  • 1/4 - cup cocoa

  • 1 - package (1-pound) powdered sugar

  • 1 - teaspoon vanilla extract

Directions:

  1. In a saucepan over medium heat, melt butter.

  2. Whisk in milk and cocoa.  Bring mixture to  boil.

  3. Remove from heat.  Gradually add sugar; stirring until smooth, stir in vanilla.

Kitchen Tip:

  • To thin frosting, add 1 to 2 Tablespoons milk.
