Country Home Cooking RecipesWest Virginia Jam Cake

Prep Time: 20 min
Baking Time: 40 min

Ingredients:

  • 2     cups sugar
  • 1     cup shortening
  • 3     eggs
  • 1     cup buttermilk
  • 1     cup berry jam
  • 2     cups flour, sifted
  • 1     teaspoon baking soda
  • 1     cup black walnuts, chipped
  • 1     cup raisin
  • 1     large apples, grated
  • 1/2  cup dates, chipped (optional)
  • 1     cup ground coconut
  • Jam Frosting (see below)

Directions:

Preheat oven to 350 F. Grease 3 (9-inch) cake pans.

  1. In a electric mixing bowl, cream sugar and shortening. Add eggs and beat well.
  2. Add buttermilk and jam alternately with flour and baking soda. Beat well.
  3. Add walnuts, raisins, apple, dates (optional), and coconut.
  4. Mix until well distributed throughout the batter.
  5. Pour batter into cake pans and bake for 30 to 40 minutes.
  6. When done, remove cake from pans and cool on wire racks.
  7. When cool, add frosting.

Jam Frosting

Prep Time: 10 min

Ingredients:

  • 2     cups sugar
  • 2     Tablespoon flour
  • 1/2  cup milk
  • 1/2  cup butter or margarine
  • 1     cup chopped nuts
  • 1     cup raisins, chopped
  • 1     cup apples, grated
  • 1     cup coconut, grated
  • Maraschino cherries (optional)

Directions:

  1. In a saucepan, mix sugar and flour. Add milk and butter.
  2. Cook about 2 minutes, stirring occasionally.
  3. Remove from heat and beat until thickened.
  4. Add nuts, raisins, apples, and coconut.
  5. Spread between layers and on top and sides of cake.
  6. If desired, decorate with Maraschino cherries.

Alan's Kitchen Tip:

  • If black walnuts are not available, used pecans or other nuts and add 1/2 teaspoon black walnut flavoring.
