Tuna Vegetable Casserole

Country Roads BarnMakes 4 to 6 servings

Prep Time: 10 min.
Baking Time: 25 to 30 min.

Ingredients:

  • 8 - Tablespoon butter

  • 1 - large onion, minced

  • 1 - can peas, drained

  • 6 - Tablespoons flour

  • 3 - cups milk

  • 1 - teaspoon salt

  • 1/4 - teaspoon pepper

  • 1 - teaspoon Worcestershire sauce

  • 1 1/2 - cups Cheddar cheese, grated

  • 2 - cans (7 oz.) tuna, drained and flaked

  • 3 - cups hot cooked noodles

  • 1/2 - teaspoon paprika

Directions:

Preheat oven to 350 F.

  1. In a skillet, melt 2 Tablespoons butter. Add onion and peas, mix well.  Cook until onion is tender and set aside.

  2. In a large sauce pan, melt remaining butter. Stir in flour, blend well.  Gradually add milk, blend until smooth. Cook, stirring constantly, until thick.  Add salt, pepper, Worcestershire sauce and 1 cup cheese. Stir until cheese melts.

  3. In a 2-1/2 quart casserole, add pea mixture. Cover with tuna and noodles.  Pour cheese sauce over all, sprinkle with paprika and remaining cheese.  Place in oven an bake for 25 to 30 minutes.
