Mountain Pass Homemade Beef Sausage

Chilling Time: 48 hrs
Baking Time: 8 hrs

Ingredients:

  • 6 - pounds ground beef
  • 6 - teaspoon saltpeter
  • 4 - teaspoon black pepper
  • 2 - teaspoon garlic salt
  • 3 - teaspoon mustard seed
  • 3 - teaspoon hickory smoked salt

Directions:

  1. In a large bowl, mix beef, saltpeter, pepper, garlic salt, mustard seed, and hickory smoked salt. Mix as for a meat loaf.
  2. Cover and refrigerator for 24 hours.
  3. Mix again and cover and refrigerate another 24 hours.
  4. Mix again and shape into logs.
  5. Place on a broiler pan rack or cake racks, set in jelly roll pan.

Preheat oven to 250° F.

  1. Bake for 8 hours.
  2. Cool and keep refrigerated.
