Fried Rattlesnake

Ingredients:

  • 2      eggs
  • 1      cup all-purpose flour
  • 1/2   teaspoon garlic powder
  •         Salt (to taste)
  •         Freshly ground pepper (to taste)
  • 8      rattlesnake rounds (about 1/2-pound)
  •         Vegetable oil for frying

Directions:

  1. In a shallow bowl, lightly beat eggs.
  2. In another shallow bowl, combine flour, garlic powder, salt and pepper.
  3. Rinse meat and pat dry.
  4. Dip in egg and coast with flour mixture.
  5. To a large skillet, add 2-inches of oil.
  6. Heat oil to 375° F or until 1-inch bread cube turns golden brown in 40 seconds.
  7. Drop meat into hot oil.
  8. Cook until golden brown.
  9. Drain on pepper towels.
