Circle-E Ranch Wyoming Spread Hot Spinach Dip

Baking Time: 25 min.

Ingredients:

  •    2 Tablespoons pure olive oil

  • 1/2 teaspoon dried basil leaves

  • 1/2 teaspoons dried thyme leaves

  •       Salt (to taste)

  •       Pepper (to taste)

  • 1/2 cup minced shallots

  •    2 Tablespoons minced garlic

  •    2 bunches fresh spinach, chopped

  •    1 package (8 ounces) light cream cheese, softened to room temperature

  • 3/4 cup low-fat ricotta cheese

  •    1 cup tomatoes, peeled, seeded, and chopped

  •       Parmesan cheese

  •       Toast wedges or crackers

Directions.

Preheat oven to 350° F.

  1. Heat oil in a skillet. Add basil, theme, salt, and pepper and stir to infuse these flavors in the oil.  Sauté shallots and garlic for 30 seconds.

  2. Add spinach and cook until leaves are wilted, about 5 minutes.  Remove from heat. Beat cream cheese and ricotta together and then fold into the spinach mixture.

  3. Adjust seasoning if needed. Spread into a 9-inch oven dish and bake for 20 minutes.  Top with tomatoes an parmesan. Bake for 5 more minutes. Serve with toast wedges or crackers.
