The Palace Grapefruit Pecos

Cowboy Cooking Recipes from AlansKitchen.comMakes 2 servings

Ingredients:

  • 2 eggs, separated

  • 2 cup grapefruit juice

  • 4 teaspoon honey

  • 1/4 teaspoon salt

  • 1/8 teaspoon nutmeg

  • 2 ounces tequila (option)

Directions:

  1. Beat the egg yolks, then stir in the grapefruit juice, honey, and salt. Beat the egg whites until stiff. 

  2. Fold into the juice mixture, mix well, and serve in chilled glasses, sprinkled with nutmeg.

  3. Note: This cooling hot - weather drink improved, to the taste of many, by the addition of 2 ounces of tequila per serving.
