Devils Elbow Pumpkin Bread
Makes
1 loaf
Ingredients:
- 6 - eggs
- 4-1/2 - cup sugar
- 1-1/2 - cup vegetable oil
- 1 - large can pumpkin
- 1 - teaspoon ground ginger
- 2-1/4 - teaspoon ground nutmeg
- 2-1/4 - teaspoon cinnamon
- 1 - teaspoon cloves
- 5-1/2 - cup all-purpose flour
- 2 - teaspoon baking soda
- 2-1/2 - teaspoon salt
- 2 - cup raisins
- 2 - package dried mixed fruit, diced
- 1-1/2 cup nuts
Directions:
Preheat oven to 350° F.
- In a mixing bowl, combine the eggs,
sugar, and oil. Stir in the pumpkin, ginger, nutmeg, cinnamon, and
cloves. Carefully stir in the flour, baking soda, and salt.
- Finally, mix in the raisins, mixed
fruit, and nuts.
- Pour batter into a loaf pan and bake
1-hour or until a tooth pick inserted into the center comes out clean.
- For a better flavor, soak dried fruit
and raisins in strong coffee water several hours or overnight.
- Drain, saving liquid to use instead of
the water called for in the recipe.
