Tim Holt's Spoon Bread
Makes
6 servings
Ingredients:
- 3 - cup milk
- 1 - cup white water-ground cornmeal
- 1-1/2 - Tablespoon melted butter
- 3 - eggs, beaten
- 1 - teaspoon salt
- 3 - teaspoon baking powder
- 2 - Tablespoon bacon drippings
Directions:
Preheat oven to 400�F.
- Put two cups milk in saucepan, stir in
cornmeal and salt and bring to a boil. Cook until thickened.
- Put bacon drippings in 1-quart baking
dish and put in the oven to heat baking dish.
- Mix remaining cup of milk with eggs,
baking powder, and 1-1/2 tablespoon melted butter.
- Mix mush and egg mixture, pour into hot
dish and bake 30 to 35 minutes. Serve at once.
