Tim Holt's Spoon Bread

Cowboy Cooking Recipes from AlansKitchen.comMakes 6 servings

Ingredients:

  • 3 - cup milk
  • 1 - cup white water-ground cornmeal
  • 1-1/2 - Tablespoon melted butter
  • 3 - eggs, beaten
  • 1 - teaspoon salt
  • 3 - teaspoon baking powder
  • 2 - Tablespoon bacon drippings

Directions:

Preheat oven to 400�F.

  1. Put two cups milk in saucepan, stir in cornmeal and salt and bring to a boil. Cook until thickened.
  2. Put bacon drippings in 1-quart baking dish and put in the oven to heat baking dish.
  3. Mix remaining cup of milk with eggs, baking powder, and 1-1/2 tablespoon melted butter.
  4. Mix mush and egg mixture, pour into hot dish and bake 30 to 35 minutes. Serve at once.
