Dodge City Oatmeal Bread
Makes
2 loaves

Baking Time: 30 min
Ingredients:
- 1 - cup quick oats
- 2 - cups boiling water
- 2/3 - cup brown sugar
- 1 1/2 - teaspoon salt
- 2 - Tablespoon vegetable oil
- 2 - packages dry yeast
- 1/3 - cup warm water
- 1- teaspoon sugar
- 5 to 7 - cups all purpose flour
Directions:
- In a large mixing bowl, cover oats with boiling water.
- Let stand until cool, then add dry yeast dissolved in warm water and
sugar.
- Beat well.
- Add flour and kneed until it isn't stick. (Takes 5 to 7 cups flour.)
- Put in greased bowl, covered, in warm place until double.
- Punch down and shape into loaves in greased pans and let rise until
double.
- Preheat oven to 375° F. and grease loaf pans.
- Bake to 30 minutes.
