Cowboy Cooking Recipes from AlansKitchen.comMakes 4 to 6 servings

Ingredients

  • 1-1/2 - cup all-purpose flour
  • 1/2 - cup buckwheat flour
  • 4 - teaspoon baking powder
  • 3 - Tablespoon sugar
  • 1/2 - teaspoon salt
  • 1 - egg, lightly beaten
  • 1 - cup milk
  • 1/4 - cup butter, melted
  • 1/4 - cup sugar
  • 1 - Tablespoon ground cinnamon

Directions

Preheat oven to 350 F and lightly grease an 8-in. square-baking pan.

  1. Into a large bowl, sift together the flour, baking powder, sugar, and salt into a large bowl.  To the flour mixture, add the egg and milk.  Mix to a soft dough.

  2. With a kitchen spoon, spread the dough evenly in the baking pan.  Brush top with melted butter.  In to small bowl, add the 1/4-cup sugar and cinnamon.  Sprinkle the sugar mixture over the top of the coffee cake.

  3. Put into the oven and bake for 25 minutes or until done.  To test for doneness, insert a wooden pick into the center.  You want it to come out clean.  Serve warm.

Do you know...
...that Originally, the term "cowboy" may have been intended literally - "a boy who tends cows."  By 1849 it had developed its modern sense as an adult cattle handler of the American West?
