Missouri Hoecakes
Makes 4 servings
Ingredients
- 2 - cups yellow cornmeal

1/2 - teaspoon baking powder

1/2 - teaspoon salt

1 - Tablespoon shortening
-
hot water
Directions
- In a mixing bowl, sift in the
cornmeal, baking powder, and salt.
- Next, add shortening and enough hot
water to make a soft dough.
- Form into small, thin cakes.
- Fry on a hot, creased griddle until
brown on both sides.
