Banana-Walnut Buckwheat Pancakes
Makes 6 to 8 servings.
Ingredients
1 - cup buckwheat flour
1 - cup all-purpose flour
4 - teaspoons baking powder
1 - teaspoon salt
1 - egg, lightly beaten
1 - cup milk
2 - bananas, diced
1/2 - cup black or English walnuts, finely chopped
Maple syrup
Butter or margarine
Banana
Walnut
Directions
- In a large bowl, sift together the
buckwheat flour, all-purpose flour, baking powder, and salt.
- In another bowl, add the egg, milk,
bananas, and walnut.
- Mix.
- Pour the egg-milk mixture into the
flour mixture.
- Stir just to combine.
- Heat your griddle and lightly grease.
- Using a 1/4-cup measuring cup, drop
batter onto the hot griddle.
- Cook until your pancake edges turn
brown and the top has bubbles.
- Flip over and cook the other side.
- Serve with butter, maple syrup,
bananas and walnuts.
