Banana-Walnut Buckwheat Pancakes
Makes 6 to 8 servings.

Ingredients

1 - cup buckwheat flour
1 - cup all-purpose flour
4 - teaspoons baking powder
1 - teaspoon salt
1 - egg, lightly beaten
1 - cup milk
2 - bananas, diced
1/2 - cup black or English walnuts, finely chopped
Maple syrup
Butter or margarine
Banana
Walnut

Directions

  • In a large bowl, sift together the buckwheat flour, all-purpose flour, baking powder, and salt.
  • In another bowl, add the egg, milk, bananas, and walnut.
  • Mix.
  • Pour the egg-milk mixture into the flour mixture.
  • Stir just to combine.
  • Heat your griddle and lightly grease.
  • Using a 1/4-cup measuring cup, drop batter onto the hot griddle.
  • Cook until your pancake edges turn brown and the top has bubbles.
  • Flip over and cook the other side.
  • Serve with butter, maple syrup, bananas and walnuts.
