Billy the Kid Egg Croquettes
Make 4 servings.
Ingredients
3 - Tablespoon butter
3 - Tablespoon flour
3/4 - cup milk
1/2 - teaspoon salt
1/8 - cayenne pepper
4 - hard-boiled eggs, chopped
1/4 - cup breadcrumbs
1 - egg, slightly beaten
Directions
- In a saucepan at low heat, melt butter.
- Stir in the flour and
gradually add the milk, salt and cayenne pepper.
- Stir until ingredients
have thickened.
- Remove sauce from heat, add the chopped eggs and cool.
- Shape into
croquettes, roll in crumbs, dip in beaten egg, and fry in deep fat at
365ºF about 3-minutes or until golden brown.
