Eggs In
A
Basket
Makes 4 servings
Ingredients:
- 2 - Tablespoons butter or margarine,
softened

8 - slices whole-wheat bread
-
8 - eggs
-
1/2 - teaspoon salt
-
1/8 - teaspoon pepper
Directions:
- Spread the butter or margarine on both
sides of bread.
- On a cutting board and using a 3-inch
cookie cutter or drink glass, remove the center of each bread slice.
- Heat a skillet and grease lightly.
- Place the buttered bread in the
skillet, including the rounds.
- Place egg in the center of each slice.
- Season with salt and pepper.
- Cook eggs until the area around the
yolk turns white.
- Turn and cook until yolk is done.
- Serve.
