C Bar Caramel Crunch Cookies

Ingredients:Cowboy Cooking Recipes from AlansKitchen.com

32 - caramels
1/2 - cup heavy cream
1 - all-purpose flour
1/2 - teaspoon baking soda
1/4 - teaspoon salt
1-1/2 - cups rolled oats
2/3 - cups packed light brown sugar
3/4 - cup unsalted butter, (room temperature)
1 - cup chopped pecans
1 - package (12-oz.) chocolate chips

Directions:

Preheat oven to 350-degrees F.
1) In a small saucepan, melt caramels in heavy cream. Allow to cool slightly.

2) Stir together flour, baking soda, and salt. Stir in oats and brown sugar. Mix in butter.

3) Press mixture evenly into a greased 9x12-inch pan. Cover bottom. Sprinkle with pecans. Pour melted caramels to cover entire surface. Bake for 20 minutes. Place on a rack.

4) Immediately sprinkle surface with chocolate chips. Allow chips to melt 2 to 3 minutes.

5) Swirl slightly to cover entire surface as frosting and to create a marble effect. Allow to cool completely before cutting in squares.

Makes 10 to 12 servings.
