Aunt Alice’s Jumbo Raisin Cookies

Ingredients:Cowboy Cooking Recipes from AlansKitchen.com

2 - cups raisins
1 - cup water
3-1/2 - cups all-purpose flour
1 - teaspoon baking powder
1 - teaspoon baking soda
1 - teaspoon baking salt
1/2 - teaspoon cinnamon
1/2 - teaspoon nutmeg
1 - cup shortening
1-3/4 - cup sugar
2 - eggs
1 - teaspoon vanilla
1/2 - cup chopped nuts

Directions:

1) In saucepan, add raisins and water. Bring to a boil for 3 minutes. Cool but do not drain water.

2) In a bowl, add flour, baking powder, baking soda, salt, cinnamon, and nutmeg and sift together.

3) Cream shortening and sugar in another bowl. Beat in eggs. Stir in raisins and liquid. Add vanilla.

4) Gradually stir in flour mixture, blending well. Stir in nuts,

5) Drop from Tablespoon 2-inches apart on greased baking sheets.

6) Bake 12 to 15 minutes at 375-degrees F.

Makes 2-1/2 dozen large cookies.
