Applesauce Raisin Cupcakes

Cowboy Cooking Recipes from AlansKitchen.comIngredients:

  • 1/2 - cup butter, soft
  • 3/4 - cup sugar
  • 2 - eggs, lightly beaten
  • 1-1/2 - cup all-purpose flour
  • 2 - teaspoon baking powder
  • 1/4 - teaspoon baking soda
  • 1/4 - teaspoon salt
  • 1-1/2 - teaspoon ground cinnamon
  • 1/2 - teaspoon ground cloves
  • 1 - cup applesauce
  • 1 - cup raisins

Directions:

Preheat oven to 350° F. Grease or place paper liners in the muffin pan.

  1. In a small mixing bowl, beat together the butter and sugar. Next, beat in the eggs.
  2. In a large mixing bowl, sift the flour, baking powder, baking soda, salt, cinnamon, and cloves. Into the flour mixture, add the butter-sugar mixture. Alternate adding in the applesauce.
  3. Beat after you add each portion. Finally, stir in the raisins.
  4. Spoon in the batter into the muffin cups. However, you only want to fill about two-thirds. Place in oven and bake 20 minutes or until center spring back.
  5. Cool about 5 minutes before placing the muffins on a cooling rack.
