XIT Butter Pecan Cookies
Makes about 8 dozen cookies.
Ingredients:
- 2 - cup butter, soft
- 1-1/3 - cup brown sugar, packed
- 2 - egg yolks, beaten
- 4 - cup all-purpose flour
- 1/4 - teaspoon salt
- 1/2 - cup pecan halves
Directions:
Preheat oven to 375° F.
- In an electric mixer, cream butter and
sugar. Next stir in egg yolks. Sift in the flour and salt and mix
well.
- Form into a dough ball and wrap in
plastic wrap. Place in refrigerator and chill 1 hour.
- Form dough into 1-inch balls and place
on ungreased cookie sheet.
- Press pecan halves into dough and gently
flatten. Place in oven and bake 10 to 12 minutes.
