XIT Butter Pecan Cookies

Makes about 8 dozen cookies.

Ingredients:

• 2 - cup butter, soft
• 1-1/3 - cup brown sugar, packed
• 2 - egg yolks, beaten
• 4 - cup all-purpose flour
• 1/4 - teaspoon salt
• 1/2 - cup pecan halves

Directions:

1. In an electric mixer, cream butter and sugar. Next stir in egg yolks. Sift in the flour and salt and mix well.
2. Form into a dough ball and wrap in plastic wrap. Place in refrigerator and chill 1 hour.
3. Form dough into 1-inch balls and place on ungreased cookie sheet.
4. Press pecan halves into dough and gently flatten. Place in oven and bake 10 to 12 minutes.
