Quick & Easy Texas Cake with Fudge Frosting

Ingredients:

  • 2 - cups sugar
  • 2 - cups all-purpose flour
  • 1 - teaspoon baking soda
  • 1/2 - teaspoon salt
  • 1 - container (8-ounce) sour cream
  • 2 - large eggs (lightly beaten)
  • 1 - cup butter or margarine
  • 1 - cup water
  • 1/4 - cup cocoa
  • Fudge Frosting (see below)

Directions:

Preheat oven to 325° F.  Grease 1015-inch jellyroll pan.

  1. In a large bowl, you want to combine sugar, flour, baking soda, and salt.  Stir in sour cream and eggs.
  2. In a heavy saucepan over medium heat, melt butter.
  3. Whisk in 1-cup water and cocoa.  Bring to a boil, whisking constantly.
  4. Remove from heat.  Stir cocoa mixture into flour mixture.  Pour into jellyroll pan.
  5. Bake for 20 to 25 minutes or until a wooden pick inserted in center of cake comes out clean.
  6. Spread frosting over warm cake.

Fudge Frosting

Makes 3 cups
Prep Time: 20 min.

Ingredients:

  • 1/2 - cup butter or margarine
  • 1/3 - cup milk
  • 1/4 - cup cocoa
  • 1 package (1-pound) powdered sugar
  • 1 - teaspoon vanilla extract

Directions:

  1. In a saucepan over medium heat, melt butter.
  2. Whisk in milk and cocoa.  Bring mixture to  boil.
  3. Remove from heat.  Gradually add sugar; stirring until smooth, stir in vanilla.

Kitchen Tip: 

  • To thin frosting, add 1 to 2 Tablespoons milk.
