At Home on the Range Lemon Pie

Makes 1 (9-inch) pieCowboy Cooking Recipes from AlansKitchen.com

Prep Time: 20 min
Chilling Time: 4 hrs or overnight

Ingredients:

  • 1     envelope unflavored gelatin
  • 1/2  cup cold water
  • 5     eggs yolks, beaten
  • 1     cup sugar, divided
  • 1     lemon rind, grated
  • 1/2  cup lemon juice
  • 5     egg whites, beaten
  • 1     baked pastry pie or graham cracker crust pie shell

Directions:

  1. In a double boiler, mix gelatin and water.  Add egg yolks and 1/2-cup sugar. Mix well.  Cook for 5 to 7 minutes (stirring constantly) until is slightly thickened.

  2. Add lemon rind and juice.  Chill until mixture mounds when dripped from spoon.  Beat egg whites until stiff and slowly add 1/2-cup sugar.

  3. Beat until very stiff.  Fold into gelatin mixture and spoon into pie shell.  Chill until serving time.
