Baked Pike with Dill Sauce
Cowboy Cooking Recipes from AlansKitchen.com Makes 4 to 6 servings

Ingredients

  • 3 to 4 pounds pike, dressed
  • 1 - Tablespoon salt
  • 1 - egg, lightly beaten with 1-Tablespoon water
  • Bread crumbs
  • 4 - thin bacon strips (5-inches long)
  • 2 - cups light cream or half & half
  • 2 - Tablespoons butter
  • 2 - cups peal onions, cooked 10 minutes in salt water
  • 1 - teaspoon sugar
  • Dill Sauce

Directions

Preheat oven to 425° F. and butter baking dish.
  1. Wash the fish, rub the inside with salt and brush the outside with egg mixture.
  2. roll in crumbs, and place on its side a baking dish.
  3. Cut 4 shallow slashes across the fish.
  4. Lay bacon in the slashes.
  5. Baked for 40 minutes.  
  6. Baste with cream several times until fish begins to brown.
  7. In a skillet, add butter and melt.
  8. Add the onions and sugar and sauté until golden.
  9. Serve the fish on a heated platter, garnish with the onions.
  10. Serve the Dill Sauce separately.
