Baked Pike with Dill
Sauce
Makes 4 to 6 servings
Ingredients
- 3 to 4 pounds pike, dressed

1 - Tablespoon salt
-
1 - egg, lightly beaten with 1-Tablespoon water

Bread crumbs
-
4 - thin bacon strips (5-inches long)

2 - cups light cream or half & half
-
2 - Tablespoons butter
-
2 - cups peal onions, cooked 10 minutes in salt water

1 - teaspoon sugar

Dill Sauce
Directions
Preheat oven to 425° F. and butter
baking dish.
- Wash the fish, rub the inside with
salt and brush the outside with egg mixture.
- roll in crumbs, and place on its side
a baking dish.
- Cut 4 shallow slashes across the fish.
- Lay bacon in the slashes.
- Baked for 40 minutes.
- Baste with cream several times until
fish begins to brown.
- In a skillet, add butter and melt.
- Add the onions and sugar and sauté
until golden.
- Serve the fish on a heated platter,
garnish with the onions.
- Serve the Dill Sauce separately.
