Chicken Fried Cube Steak

Ingredients:

  • 1/4 - teaspoon salt
  • 1/4 - teaspoon ground black pepper
  • 4 cube (4-ounce) steaks
  • 38 - saltine crackers (1-sleeve)(crushed)
  • 1-1/2 - cups all-purpose flour (divided)
  • 1/2 - teaspoon baking powder
  • 2 - teaspoons freshly ground black pepper (divided)
  • 1/2 - teaspoon ground red pepper
  • 4-3/4 - cups milk (divided)
  • 2 - large eggs
  • 3-1/2 - cups peanut oil

Directions:

  1. Sprinkle 1/4-teaspon salt and 1/4-teaspoon pepper over steaks and set aside.
  2. In a large mixing bowl, add cracker crumbs, 1-cup flour, baking powder, 1-teasooon salt, 1/2-teaspoon black pepper, and red pepper.  Mix.
  3. In a large bowl, whisk together 3/4-cup milk and eggs.
  4. Dredger stakes in cracker crumb mixture. Then dip in milk mixture, and again dredge in cracker crumb mixture.
  5. Pour oil into a 12-inch skillet (do not use a nonstick skillet).  Heat oil to 360° F.  
  6. Fry steaks 10 minutes.  Turn and fry 4 to 5 more minutes or until golden brown.
  7. Remove to a wire rack and keep steaks warm in oven at 225 F.
  8. Carefully drain hot oil.  Keep cooked bits and 1-Tablespoons of drippings in your skillet.
  9. In a bowl, whish together remaining 1/4-cup flour, 1-teaoon salt, 1 - teaspoon black pepper, and 4 cups milk.
  10. Pour flour-milk mixture in skillet.  Cook over medium-high heat, whisking constantly, 10 to 12 minutes or until thickened.
  11. Serve gravy over steaks.
