Wishbone's Meatloaf
Cowboy Cooking Recipes from AlansKitchen.comMakes 4 to 6 servings

Ingredients

  • 2 - pounds ground chuck beef
  • 3/4 - cup milk
  • 1 - medium onion, minced
  • 1/2 - cup bread crumbs
  • 4 - garlic cloves, minced
  • 1 - egg, lightly beaten
  • 2 - Tablespoons olive oil
  • 1 - teaspoon salt
  • 1/2 - teaspoon dried oregano
  • 1 - cup ketchup
  • 1 -Tablespoon brown sugar
  • 1 - Tablespoon Worcestershire sauce

Directions

Preheat a 12-inch Dutch oven - include lid.

  1. In a large bowl, you want to add beef, milk, onion, bread crumbs, garlic, egg, olive oil, salt and oregano.  Mix well.
  2. Grease hot Dutch oven with grease lightly and place the meat mixture onto the Dutch oven's bottom.
  3. Cover and place coals on the top.
  4. Bake 1 hour.
  5. In a small saucepan, you want to add ketchup, brown sugar, and Worcestershire sauce.
  6. Bring to a boil.
  7. Pour ketchup mixture over meatloaf.  
  8. Add coals to lid and continue to bake 15 minutes or until meat reaches 165 to 170° F.

Or
Preheat oven to 375° F.  Lightly grease a Dutch oven or roasting pan.

  1. In a large bowl, you want to add beef, milk, onion, bread crumbs, garlic, egg, olive oil, salt and oregano.  Mix well.
  2. Place the meat mixture onto the Dutch oven's or pan's bottom.
  3. Cover and bake 1 hour.
  4. In a small saucepan, you want to add ketchup, brown sugar, and Worcestershire sauce.
  5. Bring to a boil.
  6. Pour ketchup mixture over meatloaf.  
  7. Cover and continue to bake 15 minutes or until meat reaches 165 to 170° F.
