Salt Creek Swiss Steak

Ingredients

  • 2 - pounds round steak
  • 1/2 - teaspoon sugar
  • 1/2 - lemon
  • 1/2 - cup all-purpose flour
  • 1 - teaspoon salt
  • 1/4 - teaspoon pepper
  • 3 - Tablespoon butter
  • 2 - onions, chopped
  • 1 - green bell pepper, chopped
  • 3 - stalks celery, chopped
  • 2 - cup stewed tomatoes
  • 1/2 - cup ketchup

Directions

Preheat oven 275° F.

  1. Rub both side of the steak with sugar and lemon. 
  2. This helps to break down the fibers. 
  3. In a mixing bowl, mix the flour, salt, and pepper.
  4. Dredge and pound into the meat with the side of a saucer. 
  5. In a skillet at moderate heat, melt butter and sear the steak in it on both sides, remove, and place in a baking pan or casserole.
  6. In the same skillet, sauté the onions, pepper, and celery. 
  7. Partially cooked, add then add the stewed tomatoes and ketchup. 
  8. Cook an additional 5 minutes longer.
  9. Pour over steak, cover and bake 1-1/2 hours.
